How did a turkey and not some other edible animal get associated with Christmas?

Jesus was from the Middle East and Jewish. Wouldn´t it make more sense to eat lamb rather than turkey stuffed with pork sausage meat - common in the UK (unkosher on two counts - pork and mixing meats.). Lamb is the usual Middle East celebration meat, isn´t it?
I like lamb. Turkey is just inferior chicken.
Oh, and by the way, In Spain they eat shellfish. Also spectacularly non-kosher.
